I'm not sure when exactly it happened, but Brunch has become my favourite meal of the day.....it needs to be eaten at approximately 11.12am. I'm not sure why this is. It might be the control freak in me or it might just simply be that eaten at that time sees me through till tea time but somehow 11.12am is the time trust me.
I used the recipe for my Falafel which is on this website. I shaped them into sausages instead.

1 1/2 Cups of wholegrain spelt flour
1 Tablespoon olive oil
Pinch Himalayan Rock salt
Approx 1/4 Cup of warm water though you may need to add a little more.
I Tin drained butter beans
1 Tin chopped tomatoes
1 Small red onion chopped
1 Tablespoon tomato puree
1 Teaspoon tahini
Fresh lemon juice to taste
Freshly ground black pepper
1 Tablesoon olive oil.
In a bowl stir together using a fork, the flour, oil, salt and slowly add the water. Then use your hands to bring it together till its formed a soft dough adding as much water as necessary. Break into balls about the size of golf balls and roll out on a lightly floured surface. Sprinkle more flour on if necessary. Heat a non stick frying pan then pop a flatbread in and cook for about a minute till one sides starting to brown slightly then flip it over and do the same on that side and with the rest of the balls. If necessary you can add a little oil to the pan. Put then in a clean, dry tea towel wrapped up till you are ready to serve to keep warm.
Gently fry the onion in the olive oil till its soft. Add the tomato puree and stir it for about a minute still on the heat. Add the tomatoes, stir in and simmer for about 5 to 10 minutes till its reduced and thickened. Stir in the butter beans and warm them through gently. take off the heat and stir in the tahini then add a lttle lemon juice and black pepper to taste.
