Cauliflower Couscous

This isn't couscous as we normally know it, this is cauliflower made to look like and taste like couscous. Its completely raw though if you prefer, cook it gently in a frying pan with a little oil of your choice. I enjoy mine raw as its so fresh tasting and fullog wonderful flavours, infact give me this anyday over 'normal' couscous.


1 Medium cauliflower washed and broken into large florets.

1/4 Cup of pine nuts.

1/4 Cup of macadamia nuts.

1/2 Teaspoon of himalayan rock salt.

2 Cups of grated courgette.

2 Cups of fresh uncooked peas.

1 Cup of flaked almonds. ( nice toasted unless you want to be completely raw )

Lashings of freshly ground black pepper.

Large tin of chickpeas rinsed and drained.

1/2 Cup of pumpkin seeds.

1/2 Cup of sunflower seeds.

3 Tablespoons of good quality extra virgin olive oil.

Finely grated zest of one unwaxed lemon.

Juice of one lemon.

1/2 Cup of pomegranate seeds.


Pulse together in your food processor the cauliflower, salt, pinenuts and macadamia nuts till it resembles couscous. This only takes 10 to 20 seconds.

Tip into a bowl and stir through the remaining ingredients, checking the seasoning.

Refridgerate for 20 to 30 minutes before serving.
