Soups are definitly the new smoothies. They are a great way to fill up and are also kind on your digestion. This Pea and Celery soup is superquick if you use frozen peas but if you are lucky enough to have an abundance of fresh peas do use them. I love the sweetness in this soup and you can decide how thick you want it by how much you blend it at the end. Great with a bowl of salad alongside or if thats not enough try some of my spelt soda bread, the recipes on here.
1 White onion peeled and chopped.
1 Clove of garlic peeled and chopped.
3 Sticks of celery chopped not too finely.
1 Tablespoon of olive oil.
800g Frozen peas.
1 1/2 Pints of vegetable stock.
Himalayan rock salt and freshly ground black pepper.
Fresh herbs of your choice chopped. I used parsley.
Gently fry the celery, onion and garlic in the olive oil till soft.
Add the peas and stock and bring to the boil.
Cover and simmer gently for about 5 minutes.
Take of the heat and blend to desired consistency with a stick blender. I like mine thick but with some peas still intact.
Season to taste.
Sprinkle the herbs on when serving.
