Quinoa Salad with Avocado & Lime Dressing

This must be my most travelled food, it's the one I take if I'm off somewhere & know that getting nice clean food is going to be a problem. Its been to France, to India, America, Peru, Nepal and its even been to my local beach for a picnic. It travels well, though sometimes I swop the avocado dressing for some homemade garlicky humous......now thats a sure way of getting a sea to yourself on the train. Makes a fabulous take to work lunch too. Make a big batch up of it and store it in the fridge for a few days, just topping up your lunch box every morning.

Ingredients









Quinoa Salad

1 Cup of uncooked quinoa.

2 Cups of water.

Large handful of fresh coriander with the stalks left on roughly chopped.

1 Tablespoon of fresh lemon juice.

1 Tablespoon of extra virgin olive oil.

1 Cup of grated carrot.

1 Cup of grated courgette.

1/2 Cup of toasted almond flakes.

Small tin drained, rinsed chickpeas.

Handful of toasted pine nuts.

Himalayan rock salt and freshly ground black pepper.

Avocado & Lime Sauce

1 Avocado peeled and roughly chopped.

1 Clove of garlic.

Good sized handful of fresh coriander and stalks.

2 Teaspoons of extra virgin olive oil.

2 Tablespoons of fresh lime juice.

1 Tablespoon of water.

Himalayan rock salt and freshly ground black pepper.
