These cookies are totally delicious not only do they taste amazing, they are full of wonderful, nutritious ingredients that will energise you instead of giving you the usual post biscuit sugar slump. They are slightly unusual in that they aren't crunchy, they are chewy, almost like a protein ball that's been flattened. They also do let you have just one, unlike 'traditional' biscuits as they are so satisfying.
1 Cup of blanched almonds.
1 Cup of cashews.
1/2 Cup of walnuts.
1 Cup of pitted dates.
PInch of Himalayan rock salt.
1/4 Cup of maple syrup.
2 Teaspoons of vanilla powder.
1/2 Cup of raw cacao powder.
Blitz all the nuts together in a food processor till they resemble bread crumbs.
Add the rest of the ingredients and blitz till it becomes dough like.
Divide the mixture into 12 pieces, roll into balls then flatten to form cookies about 1/2 to 1cm deep.
Pop into the fridge for 30 minutes before serving.
If you want a perfect shape, roll the dough out between 2 pieces of greaseproof paper to about 1/2 to 1cm deep and then use a glass or cookie cutter to cut out your desired shapes, then refridgerate for 30 mins.
