I'm so excited that I've created a delicious sugarfree raw chocolate smoothie pot that is absolutly yumptious. Raw chocolate is full of wonderful antioxidents which are good for us.Theres no added sugar in these delightful pots of rich chocolatey gooeyness, the sweetness comes from some juicy dates. They are completely glutenfree, dairyfree & eggfree so perfect for vegans. they highlight just how good plantbased food can taste.
I made them originally for breakfast to give me some energy but they make amazing puddings or mid afternoon snacks. I love mine piled high with fruits and berries.
1/4 Cup of soaked cashews (ideally overnight)
1 Tablespoon of pumpkin seeds.
1/4 Cup of pitted dates.
1 Heaped tablespoon of raw cacao powder.
Pinch of Himalayan Rock Salt.
1/2 Cup of water.
1 Tablespoon of Chia Seeds.
Maple syrup optional.
Drain and rinse the cashew and add with all the other ingredients to your blender. Starting slowly, gradually increase the power to full and blitz till everything is well combined and you have a smooth consistency. Add a little more water if its too thick. You want the consistency of thick custard.
Try it and if you need it to be sweeter add a little maple syrup.
Pour into bowls or cups and serve.
It keeps well in the fridge for later.
