Strawberry Chia Pudding

Breakfasts always seem to be be one of the hardest meals as if you're not careful you end up alternating between toast and cereal. To me I want something for breakfast thats light and going to give me energy not something thats going to make me feel like I want to head back under the duvet for another hour. This chia pudding ticks so many boxes, and you can swop the strawberries for other fruits or even add cacao powder & maple syrup to turn it into a chocolate pudding. Don't just save this for breakfast, its great at any time of the day piled high with more fresh fruit.


1/3 cup blanched almonds pre soaked in water for 4 hours or overnight

1 pint of water

6 medjoul dates

1 cup of strawberries

5 tablespoons of chia seeds


Drain and rinse the almonds then put into a powerful blender with the water and blitz till its turned to almond milk. Add the dates and strawberries and blitz again till well combined. Pour into a large bowl and stir in the chia seeds then refrigerate for about 2 hours till its thickened. Keeps beautifully in the fridge.
