Superfood Salad & Lemony Humous

Humous just tastes good with anything but when its with my Superfood Salad it just reaches a new level. The salad is full of wonderful mainly green ingredients, that bring together all their amazing flavours & reputed health benefits. The humous is full of wonderful fresh, fragrant lemon juice which just makes the salad even more amazing...if that's possible.

Ingredients









Salad

A couple of handfuls of washed spinach leaves.

A handful of washed rocket.

A punnet of cress washed.

A head of brocolli cut into small florets and blanched.

A handful of sugar snap peas blanched.

A bunch of asparagus broken into pieces and blanched.

1 Avocado sliced.

A handful of toasted flaked almonds.

A handful of roughly chopped fresh herbs. I used coriander and mint.

Good quality extra virgin olive oil.

Fresh lemon juice.

Himalayan rock salt and freshly ground black pepper.

Lemony Humous

1 tin of chickpeas rinsed and drained.

2 Cloves of garlic peeled and roughly chopped.

2 Teaspoons of tahini.

Juice of one large lemon and the finely grated zest of half of it.

2 to 3 teaspoons of water.

Good pinch of himalayan rock salt.

Extra virgin olive oil.

method




To make the salad, just toss everything together in a bowl then drizzle with the extra virgin olive oil and season.

To make the humous add all the ingredients to your blender with a good slug of the olive oil. Switch the machine on and slowly drizzle in the extra virgin olive oil till you reach your preffered consistency and its all bended together and smooth.
